I made a green smoothie for lunch on day one and it is VERY yummy. Here's the recipe:
- Big handful of soaked, drained, fresh spinach
- frozen banana
- 3/4 cup almond milk
- (Optional) tablespoon almond butter
Soak and drain the spinach. Use a salad spinner to spin off the excess water. Then stuff a handful of spinach (stems and all) into the blender. Add a frozen banana and 3/4 cup almond milk to blender. Blend away! Pour into cup and enjoy. If you want to use the almond butter, add it into the blender before blending!
Tips:
--Keep a bag of frozen bananas in the freezer. Then you never need to think ahead!
--Really wash up that fresh spinach. If you buy "ready to eat spinach," like in the salad section, then no need to rinse. If you buy spinach in the produce section by the bundle, do soak and rinse!
--Double the batch and share with your spouse, child, or friend!
